During a 2 1/2 hour ride on the shuttle from O’Hare airport to the Loop I met John Redfearn, who just flew in from the U.K. for the show. He hasn't attended for three years, but came back this year to scope out new things.
"I like the fact that you can meet a lot of people with new ideas that have potential and are not on the market yet,” said Redfearn, who owns a quick-service Shake-N-Burger in South Wick, Sussex, and is a distributor for Curtis coffee equipment and Comfort Grip Wrap, which makes coffee cup holders. His favorite area to find these innovators is in the smaller booths on the ground floor, he added.
The Ontario, Canada native also talked about customers' reactions to calorie listings in the U.K., but more on that in an upcoming article for Culinary Currents.
