Sharing

During today's educational session, “Target and Attract New Customers,” the discussion turned to an American Express analysis that used check size and zip codes to estimate market share along with other competitive information. On the panel were Richard “Dick” Rivera, chief executive of 200-plus-unit Real Mex Restaurants Inc. of Cypress, Calif., whose casual-dining brands include Chevys Fresh Mex and El Torito, and Hans Lindh, vice president, restaurant industry, for American Express. “Chevys is stealing share in Orlando,” Lindh said. In New York's Times Square, he added, Chevys has a 1.4-percent share. Expressing surprise about the findings, Rivera noted, “If we could get a small increase in share it would translate [into substantially higher profits]. It is an opportunity."
